While vacationing in Colorado, we headed over the mountain to Steamboat Springs. My parents are volunteering for the summer at a wildlife refuge nearby, so we got to spend the day with them. They know about our “crazy eating” and had done some research on the restaurants in the area that would jive with our diet. They came up with two places and we had a hard time choosing which one to go to. We finally decided on Freshies.
Oh YUM! The food was all either from local sources or organic. I had a Southwestern Blackbean salad and Shawn had a Kale, Arugula and Brussel Sprout salad. Good middle of the day meal.
Before we left, we grabbed a dessert to-go, and as luck would have it, they had some awesome gluten-free Trail-Blazer muffins. They were made from Pamela’s flour which is a baking flour that is a mixture of rice flour, almond flour, and a few other things. I have never tasted or used Pamela’s baking flour, but I think I’m going to have to find something to experiment with when we get home. The flour produced a very fluffy, almost wheat-flour-texture, muffin.
After Freshies we got back in the car and drove a mile down the road to a botanical garden.
I can’t believe how cool the weather is up here. WE ARE WEARING JEANS IN AUGUST!! Amazing!
Next on the days events was a hike up to Fish Creek Falls. A quick 1 mile hike to a beautiful waterfall.
….and then a nice walk around the downtown area of Steamboat Springs. We even meet a few famous people along the way. 😉
